A CENA COOKING COURSE
The A Cena Cooking Courses are held on Monday evening from 7:00pm - 9:00pm. It's a great evening, enjoy a glass of wine as we demonstrate 3 starters, 2 fish main courses and 2 meat main courses. The price for the 2 hour course is £70.00 per person and places are limited to 6 people.

A Cena Cooking School
Little Gem, Shallot and Parmesan Salad
(Serves 4)
Recipe:
• 2 Little Gem Heads
• Handful of grating Parmesan
• 2 small shallots
• ¼ cup white wine vinegar
• good pinch of black pepper
• good pinch of Maldon seat salt
• ¼ cup of single cream
The shallot and white wine vinegar at this quantity will serve probably 4 people.
Sea Bass Al Cartoccio - A Cena Style
(Serves 1)
Recipe:
• 1 seabass fillet
• raddichio (2 leaves)
• sunblush tomatoes (handful)
• fresh oregano (small handful)
• vehmouth (2 tablespoons)
• olive oil
• salt and pepper

THE BACKYARD Grill
The Back Yard Grill...an excuse to play with fire, whilst drinking beer and having fun with mates.
When I am not cooking at A Cena, my greatest passion is to fire up the barbecue and grill, baste, mop, smoke and dry rub my way through every cut of meat I can get my hands on, using Wood burning ovens a Green Egg Smoker and an array of Barbecues.

Chuck Steak Burger
Recipe (serves 1)
• 10 oz of good chuck steak (ask butcher to coarsely grind)
• tomato ketchup (1 tbs)
• hot sauce (your favourite, 2 tsp)
• panko bread crumbs (small handful)
• Worcester Sauce Limited Edition (1 tbs)
• 1 whole egg
• salt and pepper (pinch of each)
• olive oil (1 tbs)
• red onion (2 small)
• rocket salad (small handful)
• Hellman’s Mayonnaise (1 tbs)
• Brioche (2 slices)
